Baked Mediterranean Chicken With Olives and Feta Cheese

I don’t think I can legally even call myself a blogger anymore. Wow, life has been so crazy lately that blogging hasn’t even been on my radar. (eating still ALWAYS is).
 
For those loyal followers out there, I am committing RIGHT NOW that I will at least blog once a week from now on. How can I not? I’m cooking anyways, so I may as well shoot a few images. It happens to be my passion too, which creates this whole “feel good” type thing. I need to remind myself of that and get back to it!

I’ve been experimenting with a few new recipes lately, some with spaghetti squash (recipe to come) and some sweet treats as well. You can also expect to see a recipe soon for super easy mini frittatas!

Chicken breast-excellent source of protein, contains Vitamin B6 for energy and cardiovascular health, high in niacin, which protects against age related cognitive decline
Feta cheese-high in calcium, good source of protein, lower fat content and calories than most cheeses
Olives- concentrated in monounsaturated fats and a good source of vitamin E


I came up with this recipe after being inspired by my favorite site tastespotting. The hubby loves olives (like eat all of them straight out of a can loves them), so in hopes of encouraging him to love chicken as much as I, I thought I’d give this recipe a try. Its super simple, but extremely flavorful. I served mine with couscous and salad! Amazing weeknight meal. Give it a try!

Mediterranean Chicken

Ingredients
1lb chicken breast
1 container feta cheese
1/2 of a red onion, diced
1 jalapeno pepper
1/2 cup artichoke heart
1/4 cup red pepper
1/2 cup olives
1 cup juice from olives or artichokes (or a mixture)
1 tsp dried oregano
Salt & pepper
Olive oil

Directions
Preheat the oven to 350 degrees. Place chicken breasts in a baking pan, drizzle with olive oil & season with salt and pepper. Bake for 40-45 minutes. While the chicken is baking, combine remaining ingredients in a bowl. Stir to combine. When chicken is cooked through, remove from oven and spoon some of the mixture over each breast. Put the oven up to broil, and put the chicken back in for 2-3 minutes, or until feta is browning or bubbly. Enjoy!
