How to Cook the Perfect Steak

I’m not talking marinating it and throwing it on the grill. This requires a just-right spice rub, searing the meat until an amazing crust is formed, then popping it in the oven.

Despite eating low carb, I am at heart a meat and potatoes kind of girl. Give me some protein with a side of potatoes either baked, mashed or fried, and I am one happy woman.

Some people love pasta, but not me. I could probably go the rest of my life without ever eating pasta.

Potatoes on the other hand? I. Might. Die. My absolute favorite? A strong tossup between French fries and mashed potatoes. My garlic mashed potatoes, however, win out every time.

There are just certain foods that have a need to be accompanied by the creamy comfort of mashed potatoes like meatloaf, roasted chicken or a good steak. A good steak, you see, cooked perfectly as I am about to describe, just wouldn’t be as satisfying without something rich and creamy on the side. But how can that be achieved and still maintain a low carb diet? Enter…mashed cauliflower!

One of my favorite memories with Kyle was a few years ago for my birthday, when he surprised me by planning for the two of us to attend an evening cooking class. I cried when the husband presented me with the menu of what we would be cooking together at a local kitchen emporium (not sure why, something about him planning something for us that I insanely love). It was so much fun, and I can honestly say that we continually make the recipes we learned that night.

The most useful thing I learned from that experience was how to cook the perfect steak. I’m not talking marinating it and throwing it on the grill. I’m talking about creating the perfect spice rub, searing it on either side until an amazing crust is formed, then popping it in the oven until it is cooked to temperature. After learning this method, steaks have taken on a whole new meaning in our lives. ☺

Health Benefits

Sirloin Steak- excellent source of macro and trace minerals, zinc and magnesium. Rich in Vitamin B and carnitine. Contains fat soluble vitamins necessary for utilizing minerals found in foods. Rich in conjugated linoleic acid, which is proven to have strong anticancer effects, as well as palmitoleic acid which protects from viruses and pathogens. (If possible, purchase only grass-fed, lean cuts of beef)
Cauliflower-high in fiber and minerals, biotin and folate necessary for cell growth.

I created my own simple spice rub in addition to searing the steaks, and when I came across an idea for “faux” mashed potatoes several months ago, I knew it would be the perfect addition for an amazing, simple, satisfying and healthy meal. I ran with the idea of pureed cauliflower, and added the same ingredients as my garlic mashed potatoes. With this recipe, I can have my steak and
(almost) potatoes…and eat it too!

The Perfect Steak

2 sirloin steaks
1 tbsp olive oil
1/2 tbsp kosher salt
1/2 tbsp seasoned salt
1/2 tbsp garlic powder
Begin by combining kosher salt, seasoned salt, and garlic powder in a small bowl. Mix to combine. In a large sauté pan, heat olive oil over high heat. Season steaks with salt and garlic mixture, pressing into the meat. When the pan starts to smoke, carefully add steaks. Allow the steaks to cook for about 3 to 4 minutes on each side without moving or piercing the meat. This will allow the steak to form a crusty sear. When the steaks are brown, flip and sear other side for another 3-4 minutes. Depending on desired temperature, steaks can be placed in an oven at 400° until doneness. Transfer to plate and allow to rest for 10 minutes.

Mashed Cauliflower

1 head cauliflower
1 tbsp butter
1 tbsp light sour cream
1 tbsp Neufchâtel cream cheese
2 cloves roasted garlic
Salt & Pepper
Clean cauliflower and cut small florets. Steam in a pot of boiling water, about 8 minutes or until tender and drain when done. Transfer cauliflower back to pot and add butter, sour cream, cream cheese, and roasted garlic (May also combine in food processor). Mash until mixed and of creamy consistency. Salt and pepper to taste.
*** May not be as healthy as plain cauliflower, but definitely better than sitting down to a pot of mashed potatoes!
